| Celiac disease,
also known as gluten intolerance, is a genetic disorder that
affects roughly 1 in 133 people. Symptoms of celiac disease can
range from the classic features, such as diarrhea, weight loss,
and malnutrition, to latent symptoms such as isolated nutrient
deficiencies but no gastrointestinal symptoms. Those affected
suffer damage to the villi in their intestines. A Gluten Free Diet
is prescribed to treat people with celiac disease to avoid this
damage and the related disorders that are associated with the

and was probably eaten on a stone in an oven. Around 3000 B.C.
a closed oven allowed for leavened breads and yeast risen
breads. Back then, sprouted grains were used to make bread.
